Tomato, Garlic & Basil Sauce for Pot Ready Wanna Mar Mussels

Serves 2 as a main course
Serves 3-4 as entrée

Ingredients:

  • 1kg bag Wanna Mar Mussels
  • 1 tbsp Olive Oil
  • 4 sliced Spring Onions
  • 2 tsps Crushed Garlic
  • ½ cup White wine
  • 800gm Italian chopped Tomatoes or a good pasta sauce
  • 1 bunch Basil

Method:

Heat oil, add onions and garlic. Cook until onions are just soft. Add wine and tomatoes. Bring to boil. Add a few crushed basil leaves. Stir well.

Place mussels in a covered pot over high heat. When mussels are opened place mussels in bowl and pour mixture over.
Garnish with basil leaves and fresh spring onions.
